Recipes & Inspiration
Here at Island Mango, we love sharing ideas on how to enjoy our full range of Filipino fruits. Most of our recipes come from trial and error, and plenty of taste testing at Filipino parties and gatherings… (as a British man with a Filipino wife, I very much enjoy these!)
So, let’s get into it. Whether you’re working with our sweet Carabao Mangoes, zesty Calamansi, creamy Mangosteen, or crispy Singkamas — there’s something here for everyone.
Mango Float (Filipino No-Bake Dessert)
Layers of graham crackers, whipped cream, and slices of our juicy Carabao Mangoes, chilled overnight for the perfect creamy, fruity combo.
Pro tip: Use extra ripe mangoes for the dreamiest sweetness (roughly 5–7 days after they arrive in Ireland).
Mango Smoothie
Blend Carabao Mango chunks with milk (or coconut milk), a spoon of natural yoghurt, a little ice and honey. Optional: add a scoop of vanilla ice cream for that extra thick vibe.
Turon (Banana Spring Rolls)
A classic Filipino street food using our Saba Bananas! Wrap sliced Saba Banana and a little brown sugar in a spring roll wrapper, then fry until golden and crispy. Serve warm — absolutely irresistible.
Calamansi Juice
Squeeze fresh Calamansi into cold water with a little honey or sugar. Refreshing, tangy, and packed with Vitamin C. Perfect on a warm day or as a palate cleanser between dishes.
Pomelo Salad
Peel and segment our Philippine Pomelo, then toss with shrimp, toasted coconut, fresh mint, and a light fish sauce dressing. A bright, refreshing dish that’s a staple at Filipino celebrations.
Singkamas (Jicama) Sticks with Calamansi Dip
Slice Singkamas into sticks and serve with a dipping sauce of Calamansi juice, a pinch of salt, and chilli flakes. A crunchy, hydrating snack that’s popular across the Philippines.
Mango Sticky Rice
A Thai/Filipino favourite! Warm glutinous rice topped with coconut milk sauce and sweet Carabao Mango slices. Simply delicious.
